A little improv treat made from some left over chicken boobies.
Maintaining a blog with other adult responsibilities is quite tasking i have come to learn. Clearly i'm 2 days late with this post but lets go ahead and see how to make you hungry.
Two days after my 1st blog post after video gaming for a while i got the munchies and took to the kitchen. Of course having not have planned for this impromptu meal, i randomly (but calculated) took some items out the fridge and laid them on the table. I had remembered seeing a recipe about using chia seeds with chicken ( http://www.self.com/food/recipes/2016/02/chia-crusted-chicken ) and decided to make my own version of it.
Next was to prepare the various dips for the chicken. In my first pan i mixed flour with some seasoning. I used salt, pepper and garlic powder. Your second bowl should contain a well beaten egg or two just enough for dipping the chicken in. The third bowl is my favourite. Breadcrumbs, chia seeds and unsweetened dessicated coconut.
Light the stove, slap a pan on there and proceed to pour some oil. This is also an important step. Deciding on what type of oil to use to further enhance the flavours of your dish. As expected i use olive oil for my Italian inspired dishes, vegetable oil for most of my cooking and then there's the special one, coconut oil. The fragrant aroma and taste it leaves behind is amazing.
So as the chicken was frying, i decided to take the left over prosciutto and place in between some mozarella slices. That also goes into a frying pan. Make sure the cheese is melted to your liking. I like it gooey.
Then we come to plating. To be honest i did struggle with this one. After some trial and error, i decided to go with a mato and pesto base for the dis and then lemon slices for some garnish. I felt the colours really complemented each other
Once the chicken is nice and gold brown on both sides, plate it on top of the mayo and pesto. Next lay the prosciutto and cheese on top of the chicken and then place the other piece of chicken on top. Kinda looks like a burger in my opinion but very tasty nonetheless. Enjoy
